S LOW -C OOKED R ANCH P OTATOES
6 bacon strips, chopped 2 ½ pounds small red potatoes, cubed 8oz cream cheese, softened 10 ¾ oz condensed cream of potato soup ¼ C 2% milk 1 envelope buttermilk ranch salad dressing mix 3 Tbsp. thinly sliced green onions

1. In a skillet, cook bacon until crisp. Remove with a slotted spoon; drain on paper towels. Reserve 1 Tbsp. of drippings. 2. Place potatoes in a 3-4qt. slow cooker. 3. In a bowl, beat cream cheese, soup, milk, dressing mix and reserved drippings until blended. Stir into potatoes. Sprinkle with bacon. 4. Cook, covered, on low 7-8 hours until potatoes are tender. Top with green onions and serve.
